“Where the bush becomes a tree; a wild, sun-drenched expression of Fuding’s premier terroir.”
At ZENTAOEAST, we believe the most profound teas are those that have been allowed to find their own rhythm. This 2025 White Peony (Bai Mu Dan) is a landmark discovery from Hulin, Panxi—widely regarded as the pinnacle terroir of Fuding White Tea. Crafted by the dedicated artisan Mr. Zhou Jing, this tea is the result of a rare philosophy: letting nature take the lead.
The Garden: A Dialogue of Non-Intervention

Naturally Unpruned, Tree-Form Fuding Dahao Tea Garden in Hulin, Panxi, Fuding.
When I first encountered Mr. Zhou’s garden in Hulin, I was struck by a sense of “Shock and Joy.” Here, the Fuding Dahao tea trees, traditionally kept as low-pruned shrubs, have been left largely unpruned for approximately 20 years.
Arboreal Evolution: Through years of natural growth and low-intervention cultivation, these trees have gradually developed into tall, tree-like forms. They are harvested only once a year, in the spring, allowing the trees to rest and accumulate mineral depth for the remaining three seasons.
The Wild Harvest: On March 20, 2025, the first flush of these “arboreal” buds and leaves was hand-picked. The yield is low and the labor intensive, but the result is a leaf shaped by time, season, and the unfiltered energy of the Panxi mountains.
The Craft: Traditional Sun-Drying (Rì Shài)
Mr. Zhou Jing follows the most demanding and ancient of all white tea methods: 100% Natural Sun-Drying.
The Alchemy of Light: Unlike modern oven-dried white teas, sun-dried leaves undergo a slow, natural wilting process under the gentle spring sun. This preserves the active enzymes and produces a “Sun Fragrance” (Tàiyáng Wèi) that is impossible to replicate artificially.
Deep Transformation: This method creates a tea that is not only delicious today but possesses a superior foundation for aging.
The Aging: Scientific Dry Storage
After being pressed into 100g cakes on April 10, 2025, this tea entered the ZENTAOEAST dedicated warehouse.
Curated Maturation: We maintain strict, scientific dry-storage conditions. This ensures that the delicate floral notes of the White Peony will gradually evolve into the rich, medicinal, and honeyed tones that make aged Panxi white tea so coveted.
Curator’s Verdict
“The 2025 Panxi Hulin White Peony is exactly the tea I was searching for. Seeing Fuding Dahao bushes transformed into tall, wild trees was a revelation. Mr. Zhou Jing’s refusal to prune or over-process has resulted in a tea with a ‘muscular’ body and an incredibly clean, crystalline sweetness. This is a white tea with the soul of a forest. It is a vibrant, living investment in stillness.”
